Sometimes the last minute dinners can turn out to be keepers. This was a random dinner I threw together with what I had available.
1 butternut squash, cubed
1 bag of Trader Joes broccoli slaw
2 tbsp curry powder (or “to taste”)
1 onion, diced
2-3 cups chicken stock (or water)
1 tbsp coconut oil (or other cooking oil)
Heat oil in large pan or stock pot. Saute onion.
Add cubed butternut squash and chicken stock. Bring to boil then turn down to simmer. Add broccoli slaw and curry powder (do not stir). Cover and let simmer until butternut squash and broccoli slaw is tender (about 10 minutes).
For my next run at this recipe I’m considering adding quinoa. If I do that, I will up the chicken stock amount. It will increase the cooking time as well.
My kids at all of it….although, they did say that it was a little spicy. I backed acorn squash as well. That is always a winner!
