Love love love this recipe!  My girls refer to it as “special syrup”.  I like it because it has less sugar than maple syrup and it adds some berries rich in antioxidants to a not so healthy breakfast choice.  We have pancakes or waffles every Saturday morning.  It just isn’t the weekend for me without them.  A family tradition that we have made as healthy as possible by making our pancakes from scratch and adding fruits and berries as much as possible!

Blackberry Cream Cheese Topping for Pancakes and Waffles

Ingredients

  • 8 oz organic cream cheese
  • 1 cup of organic berries
  • organic (or raw) milk as needed (consider coconut milk!)
  • Optional–1 tbsp organic sugar, a little honey or agave to sweeten it up.

Directions

  1. In a small food processor, combine all ingredients and blend!
  2. Add milk to thin out to desired consistency or leave thick.
  3. It is very easy to increase the quantity by adding more berries and cream cheese.

Pretty simple, right?  ENJOY!  Try experimenting with berry combinations.  I’m going to try adding some banana next time!
