Cauliflower Curry Chicken with Broccoli Slaw

photo (19)Yes, broccoli slaw is back!  I picked up another bag at Trader Joes since the last recipe came out so tasty!  I also went in the curry direction with it again.  We at ridiculously early today after a long day out at the museum and picking up two 55 gallon drums for my new compost tumbler and rain barrel project!  Here’s how I made the meal…

Ingredients:

  • 1 head of cauliflower cut into florets
  • 1 bag of Trader Joes Broccoli Slaw
  • 2 large chicken breasts cut into strips or chunks
  • 1 onion
  • coconut oil
  • 1 cup of coconut milk
  • 2 tbsp of curry powder (or more to taste!)
  • salt to taste (optional)

Directions:

Place cauliflower in your chosen method to steam, layer the broccoli slaw on top of it.  Meanwhile, heat coconut oil and place onion and chicken breast in pan.  Add coconut milk and curry powder.  Cook until chicken is cooked through.  Serve!  This was a nice easy one.
