Taco night is popular at our house. It is one meal that I can make and know that everyone will enjoy it.
I also like taco night because it is one I can prep during the day and just spend a few 15 minutes or so cooking right before we eat.
We load up our tacos with cheese, sour cream, guacamole, salsa, and lots of veggies. (And some hot sauce for the adults!) Everyone is happy with a variety of choices. I also usually make enough so that I have extra ‘filling’ to roll into burritos for another quick dinner during the same week.
Cilantro lime tacos are a combination of flavors that meld well together for Mexican meals. It adds a fresh flavor and gives new life to the meal.
Tacos are also super kid friendly so this is perfect when having a group of people over…always a crowd pleaser when everyone can pick their own toppings.
Ingredients
- 1 pounds of ground beef
- 1 chopped onion
- 2 cloves of minced garlic
- salt
- pepper
- 1 bunch of cilantro
- 1/2 cup rice
- 1 lime
Directions
- Cook rice according to package, adding 1/2 of the bunch of cilantro and the juice from the lime.
- While rice is cooking, saute the ground beef, onion and garlic in pan.
- Add salt and pepper (to your liking) while frying.
- When meat is no longer pink, add the rest of the cilantro and stir.
- Add cooked rice to the meat and stir until everything is blended.
- Serve with taco toppings on a corn shell.
Notes
I tend to use meat that doesn't have a lot of fat so I don't drain the meat, however, if you have a fatty percent of ground beef, you may want to drain some of the fat before adding the rice.
