Crock Pot Chicken Stock

Crock Pot Chicken Stock is something I never thought I’d try to do until I started eating healthier and feeling more confident about trying new things.  It is so easy to do and SAVES you money!  I still buy the cases of chicken broth from Costco just in case I run out but they last me A LOT longer now!  You can add other vegetables and herbs to this recipe.  Get creative and try different combinations.  Don’t worry if you’re out of something, just don’t waste the leftover bones etc from the whole chicken you baked last night!  Learn more about ways to save money HERE. 

Crock Pot Chicken Stock

Ingredients
  1. 1 leftover whole chicken
  2. 5 celery stalks (or less desirable celery ends and base), chopped
  3. 1 onion, chopped
  4. 2 garlic cloves, crushed
  5. 8 cups water
  6. salt and pepper
  7. 2 carrots chopped
  8. 1/4 cup parsley, roughly chopped
Instructions
  1. Add all ingredients to crock pot and cook on low for 4-6 hours. Remove chicken from crock pot and strain all vegetables from broth. Pour broth into jars for storage and place in refrigerator.
