I enjoy texas caviar as a fantastic addition to some organic tortilla chips. I made a little twist on the traditional recipe with some avocado, salsa, and essential oils. This is one of my go-to appetizers! I hope you enjoy it as much as we do!
Ingredients
- 1/2 bag of Trader Joes frozen roasted corn
- 2 ripe avocados (ripe avocados are soft not hard)
- 1 can of organic black beans, rinsed and drained
- 1 1/2 cups organic salsa
- 2-4 drops Lime or Lemon essential oil {try 2 and increase to taste.) Where to buy essential oils.
Directions
- Prepare roasted corn as directed (you can use fresh corn and saute it in a pan with a little butter or olive oil).
- Place corn in large bowl.
- Rinse and drain black beans and add to corn.
- Add Lemon or Lime essential oil to salsa, stir and taste.
- Add salsa to above corn and bean mixture.
- At this point you can stop and refrigerate mixture. I wait until just before my guests arrive to add the avocado so it is fresh. I also will split the mixture into two batches and serve half at a time.
- Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl then cut into 1/2' chunks.
- Enjoy!
