Curry Gravy that will remind you of the curry fries in England!
I should really call this post “How I made my husband fall in love with me all over again.” He was seriously drooling after eating these! My mother in-law is from England and my husband has always loved the curry fries every time we traveled there. I decided to try to duplicate it at home! My attempt was an absolute WIN.
Ingredients
- 2 large Sweet Potatoes
- 1 tbsp Organic Olive Oil
Directions
- Preheat oven to 400 degrees F.
- Peel and cut sweet potatoes into wedges.
- Place wedges into 9" by 13" glass pan.
- Bake for 35-45 minutes.
Ingredients
- 2 tbsp Coconut Oil
- 3 tbsp Organic Unbleached All Purpose Flour (Gluten Free substitute use coconut flour)
- 1 1/2 cups Organic Coconut Milk
- 2-4 tbsp Organic Curry Powder (I use mild but feel free to use spicy!)
- 1 tsp Sea Salt (optional)
Directions
- In a saucepan over medium heat, melt coconut oil.
- Add flour and mix with whisk with the coconut oil for about 2-3 minutes.
- Pour coconut milk into the mixture and combine well.
- Allow mixture to come to a simmer while stirring (about 4 minutes).
- Mixture should start to thicken.
- Add 2 tbsp curry powder and combine well.
- Carefully taste test the mixture and continue to add curry powder until you reach your desired potency. I notice this varies based on the brand and level of spiciness.
- Once curry powder is mixed in well, add salt if necessary to taste.
- Drizzle over baked sweet potatoes!
